Cookery School Facilities Lynda Booth’s Dublin Cookery School is conveniently situated on Brookfield Terrace (behind Carysfort Avenue) in Blackrock. It makes little impression from the outside which makes for all the greater impact as you step in. The design is breathtaking and it is so bright and airy that it is a massively pleasing environment in which to work. Because of its area (3,000 sq ft), it has been possible to create three distinct sections and yet keep the open plan. The space is split into the following three functional areas: The Demonstration Kitchen has been designed to make life easy for the Chef and to give perfect viewing for the student. The large mirror above the granite counter allows students to keep a close eye on the dishes as they are being prepared. The Workstation Area is made up of twelve work stations at which students can cook in pairs. Each station is fully equipped so that whether making pasta, crushing spices or griddling fish, everything is close to hand. Domestic hobs and ovens are used in the school so that students can develop their skills using the equipment to which most people are usually exposed. At the far end of the school is the Dining Room. This room seats up to 32 people, and is a wonderful space for eating and entertaining. A perfect place for students to unwind and enjoy the fruits of their labour. Here’s a little taste of what you’ll experience in Dublin… Why come to Dublin Cookery School? This is a cookery school with a big heart. We are not just passionate teachers, we love to welcome visitors from other countries. On our one month and three month courses, we have a range of students from overseas. At last count, these courses have attracted participants from over 20 different countries so this is something we know a lot about. What will Dublin Cookery School do for me? It can be a little intimidating coming to a capital city for the first time but no worries if you are new to Dublin. Our job is to make you feel welcome – not just to teach you how to cook. From the moment you start you won’t feel on your own. There is a really relaxed atmosphere in the school. We cook together, eat together and this is a great way of meeting Irish people who share a love of cooking. In addition to any suggestions from your fellow students, all our staff will be keen to point you in the right direction, giving you the inside track particularly on all things foodie. What food markets should I go to at weekend? Which fish shop on the pier do the seals swim up to? Where is the best Sunday brunch? Where would be the best places to visit outside Dublin? Where is the school situated? The school is perfectly situated in Blackrock in the southern suburbs of the city. Stroll down to the local station and take the light rail to the city centre (15 minutes) or take a trip in the other direction along the coast. There are some spectacular views and some great places to see (villages like Dun Laoghaire, Dalkey, the beach at Killiney or the coastal walk between Bray and Greystones). Blackrock is one of the most sought after areas in the city because of its location, charm and proximity to the sea. What about accommodation? You may want to look after this yourself particularly as there are so many sites, such as AirBnB, with a selection of accommodation. However, we do offer a free accommodation service to all of our students and can advise on whether an area has easy access to the school. If you want more help, we are happy to oblige. Whatever your budget or preferences we can recommend homestays with local families, contact local accommodation or advise on hotels. What if I am not completely fluent in English? Relax. Food breaks down all language barriers. Working through English all day will certainly boost your fluency. You will watch every dish being prepared and there will be tutors at your side. If you are not sure of any point or didn’t understand some of the details, we are there to assist you. We actually think that our one week course provides an ideal opportunity to be surrounded by native speakers for those who want to try out their language skills. And how about Dublin? We love Dublin. Each of the staff have their own favourite corners and activities which they would be happy to share with you. We have to admit that rather a lot of them revolve around food but that is our passion. A Brief History of Setanta College Dr Liam Hennessy, Academic Director of Setanta College Dr Liam Hennessy FRAMI is an Exercise Physiologist, Strength and Conditioning Coach and former international athlete. Liam took up the position of Direct of Fitness with the IRFU in the year 2000 with a remit to create structures and embed methodologies to help Irish Rugby compete in the professional era. The role encompassed overseeing the Fitness and Strength and Conditioning… [+] of the elite squad and also recruiting staff to create and work within academies to develop younger players throughout the country. During the process of recruiting the required 30 plus staff, it proved difficult to find professionals with both the academic and practical coaching experience required for these key roles. To implement Dr Hennessy’s philosophy and focus on long-term player development, staff needed to understand the key principles in Performance Science and Strength and Conditioning but also have the ability to apply these principles and coach. The Solution Dr Hennessy developed a series of training modules containing the latest thinking in Performance Science and Strength and Conditioning but also with a focus on practical application and coaching. Under the mentorship and guidance of Dr Hennessy staff were trained using these unique modules. Many of the graduates from this IRFU system have gone on to take up roles in the Premier League, NFL, World Rugby and well as many other global professional sports organisations. Setanta College Was Founded Using the training modules he developed and evolved whilst at the IRFU, Dr Hennessy founded Setanta College in 2006. Through a partnership with Limerick Institute of Technology the modules were accredited to Certificate, Degree and Masters level programmes for full time study. Shortly afterword’s the modules were also accredited to Certificate, Degree and Masters level for part time study online via QQI (Quality and Qualifications Ireland), which is an internationally recognised accrediting body. Through a partnership with World Rugby bespoke online modules have been developed and are now used as World Rugby’s Global Gold Standard for Coaching and Strength and Conditioning. To date 35,000 participants around the world have enrolled in these programmes. The National Strength and Conditioning Association based in Colorado U.S.A. with 30,000 plus members and the Titleist Performance Institute based in California U.S.A. with over 15,000 certified professionals recognise and endorse Setanta College programmes. It also decided that it should be names for the 42nd President of the United State, President William Jefferson Clinton, in recognition of his role both personally, as well as those of the United States Government, Congress and people, in the Irish Peace Process. The success of the tender owed much to the enthusiastic support and imagination of Professor Maurice Brich of the School of History and Archivese and Dr. Ron Callan of the School of English, Drama and Film Studies. Professor Bric was the first acting Director of the Institute and played a key role in laying foundations, such as the introduction of the Institute’s Masters programme in American Studies. In 2004, Professor Liam Kennedy was appointed Director, responsible for the Institute’s teaching, research and outreach programmes.
